Sodium Benzoate

Sodium Benzoate is the sodium salt of benzoic acid. One gram of this product readily dissolves in just 2ml of water, 75ml of ethyl alcohol, and 50ml of 90% ethyl alcohol. However, it is insoluble in ethyl ether. A typical aqueous solution will be slightly alkaline and has a sweetish astringent taste. Sodium Benzoate is a free-flowing, white, odorless powder. Each gram contains 84.7% of available benzoic acid.
